The Italian Cultural Centre will be hosting four exclusive Italian pasta making courses with Mastro Pastaio Sergio Cinti.

Classic and Gnocchi alla Romana
Monday, February 7, 2022
6:00 – 9:00 pm 
Italy is home to many different shapes of pasta. Some have become iconic parts of Italian cuisine across the planet, such as gnocchi, soft dough dumplings, which were already famous during Roman times.
During this workshop you will learn how to make the semolina based gnocchi alla romana and the classic gnocchi.
Mastro Pastaio Sergio Cinti and Chef will unlock the secrets of gnocchi in an intimate, hands-on class. Attendees will learn to make their own dough, how to cut it, and how to shape it. At the end of the class, you will taste and bring home the pasta you created.

Bring an apron, a clean container, comfortable clothes and your appetite! Feel free to bring a bottle of wine, as well.

Pasta Lunga all’Uovo – Tagliatelle and Pappardelle

Time to let your inner Italian shine and take your pasta-making skills to the next level with our Pasta Lunga all’Uovo – Tagliatelle and Pappardelle class.

Chef and Pasta Master Sergio Cinti will teach you all the secrets of egg pasta making. Originally from Bologna (the motherland of egg pasta), Sergio will share his knowledge with you and turn you into an expert pasta master. You will make your own dough, learn how to stretch it using a pasta machine, how to cut it and how to cook it. At the end of the class you will be able to taste the excellent pasta you crafted with your own two hands. There will also be some pasta to bring home.
Bring an apron, a clean container, comfortable clothes and your appetite! Feel free to bring a bottle of wine, as well.
Pasta Long and Short without Eggs – Cavetelli and Pici 
April 4, 2021 
6:00 – 9:00 pm 
Cavatelli is pasta formatted to the regions of Southern Italy – specifically Molise, Puglia, Campania, Basilicata, Calabria and Sicily. Made from a mixture of re-ground durum wheat semolina flour (sometimes with the addition of potatoes or bean flour), water and salt; this pasta features a hollow shell of different sizes that allow them to better hold the sauce. The sauce is traditionally made of tomato and salted ricotta cheese, or tomato and minced meat.
Pici is a thick, hand rolled pasta, similar to fat spaghetti usually made from just flour and water. It originated in the province of Siena in Tuscany.
Chef and Pasta Master Sergio Cinti will teach you all the secrets of a perfect hand-made pasta. You will make your own dough, learn how to stretch it, how to cut it and how to cook it. Lasagna Bolognese Tradizionale and Vegetariana

Italy is home to many different shapes of pasta and pasta recipes. Some pastas became iconic elements of Italian cuisine across the planet, such as lasagna.
Lasagna is a dish made up of stacked layers of flat pasta alternating with filling, which is traditionally ragù (ground meats and tomato sauce) or vegetarian.
Come to the our centre and join Chef and Mastro Pastaio Sergio Cinti, as they will unlock the secrets of lasagna, in an intimate, hands-on class. Attendees will learn how to make their own lasagna. You will make all of your friends jealous by mastering this complex and delicious recipe. At the end of the class, you will taste and bring home the lasagna you created.
Bring an apron, a clean container, comfortable clothes and your appetite! Feel free to bring a bottle of wine, as well.
