Join Pizza Master Giuseppe Cortinovis in this hands-on workshop to learn the secrets of the perfect pizza Romana.
High hydration dough (80%) require extra care in the art of mixing and shaping the pie.
In this class we are going to see the step by step process to prepare the romana pizza dough, using a direct method and adding water to reach a soft and extensible pie that will cook in 10 minutes creating a bubbling open crumb.
Attendees will have hands on in all the process and will create their very own final pie using their choices of ingredients from the ones provided at the course.
Bring: apron and a wide container to take home your handmade 80% hydration Roman pizza dough.
If you want, bring 1 ingredient that will make your pizza extra special!!
No cash refunds are available for the cultural events, workshop & classes. With at least 7 days’ notice, we would be happy to provide a credit to use towards other workshops and selected Il Centro initiatives (please inquire). If you give us less than 7 days’ notice, we may be able to issue a credit if we can fill your seat from our waiting list, but there is no guarantee. No credit will be issued for no-shows: whether you are able to attend or not, the instructor still needs to be fairly compensated. All tickets are 100% transferable at any time – just provide your receipt to the person attending or let us know their name by phone or email.
