In the 15th Century, Italian traveler, Pietro Casola, was visiting the island of Crete, and he discovered a peculiar local cheese. He noticed how this fresh cheese was preserved in brine, and how it was cut in slices before being placed in barrels, sold and consumed. The Greeks used the word “feta” to describe it; “feta” comes from the Italian “fetta”, which means “slice”. During the 19th Century, feta cheese became famous not only in Greece, but across the planet – and even today, it is a staple in Greek and fusion cuisine.
Discover the secrets of making your own feta cheese, following the teachings of our exceptional instructor, Paula Maddison.
Paula Maddison lives on Gabriola Island, where she aspires to live a life as sustainable as possible, and she has been refining and teaching the lost art of cheese making for the past decade. Her mission is to demystify the idea that cheese making is difficult through her demonstrative classes, where students are welcome to taste, touch and feel each phase of the creation of the cheese.
Students will bring home instructions and ingredients to make their own feta cheese, and they will learn some unique and creative serving ideas.
The workshop will be held in the Ballroom. A limited number of tickets is available for this socially distanced event, where precautions will be taken to avoid the spread of Covid-19, following the restrictions and instructions from the BC Health Authority. Ticket sales close the day before the event.
Refund Policy No cash refunds are available for the cultural events, workshop & classes. With at least 7 days’ notice, we would be happy to provide a credit to use towards other workshops and selected Il Centro initiatives (please inquire). If you give us less than 7 days’ notice, we may be able to issue a credit if we can fill your seat from our waiting list, but there is no guarantee. No credit will be issued for no-shows: whether you are able to attend or not, the instructor still needs to be fairly compensated. All tickets are 100% transferable at any time – just provide your receipt to the person attending or let us know their name by phone or email.
