Come spend a few hours with Paula Madison and journey into the history science and detailed process of hand crafting cheeses. This class will be focusing of the creation of soft cheeses teaching attendees how to make your own everyday dairy items including sour cream and cream cheese. Paula will show you how to make your own garlic herb dip and the most delicious mascarpone. Making your own everyday dairy is very economical and doesn’t require specialized equipment. A new, unique, fun and delicious hobby for all!

Paula Maddison lives on Gabriola Island, where she aspires to live a life as sustainable as possible, and she has been refining and teaching the lost art of cheese making for the past decade. Her mission is to demystify the idea that cheese making is difficult through her demonstrative classes, where students are welcome to taste, touch and feel each phase of the creation of the cheese.

The workshop will be held in one of our Halls. A limited number of tickets is available for this socially distanced event, where precautions will be taken to avoid the spread of Covid-19, following the restrictions and instructions from the BC Health Authority.

Il Centro is required to follow the Provincial Health Order requiring all patrons entering our facility to show proof of both COVID-19 vaccinations and to wear a mask. You must show either a printed or digital copy of your B.C. VaccinationCard. Our staff deserves your kindness and respect as they are doing their job by following these new orders. If you have concerns about these mandates, we encourage you to contact a Provincial Health Office or your MLA.

Ticket sales close the day before the event.

Refund Policy No cash refunds are available for the cultural events, workshop & classes. With at least 7 days’ notice, we would be happy to provide a credit to use towards other workshops and selected Il Centro initiatives (please inquire).  If you give us less than 7 days’ notice, we may be able to issue a credit if we can fill your seat from our waiting list, but there is no guarantee. No credit will be issued for no-shows: whether you are able to attend or not, the instructor still needs to be fairly compensated. All tickets are 100% transferable at any time – just provide your receipt to the person attending or let us know their name by phone or email.
